Honey lemon chicken meal prep. A simple, flavorful option for lunch during the week.
Olive oil | |
4 chicken breasts | |
1/4 cup honey | |
1 tbsp low sodium soy sauce (no judgement if you do full sodium soy sauce) | |
1/3 cup lemon juice | |
20-30 aspargus, wood ends removed | |
1 tbsp garlic, chopped | |
1 tsp kosher salt | |
3 tbsp parsley, finely chopped | |
2 lemons, to garnish |
An easy, minor spin on your basic chicken meal prep for the week.
1. | Preheat oven to 400 degrees. |
2. | Line baking sheet with foil. Add chicken and sprinkle with salt. |
3. | In a small bowl, combine the lemon juice, soy sauce, honey, garlic, a dash of the parsley, salt and pepper. |
4. | Pour 3/4 of this mixture over the chicken. |
5. | Arrange lemon slices on top of chicken. |
6. | Cover the sheet with foil and bake for about 20-25 min, until cooked through. |
7. | Uncover, and then place asparagus on pan as well. |
8. | Pour the remaining honey lemon mixture on the asparagus. |
9. | Add a pinch of salt and pepper. |
10. | Return the pan to the oven. Broil until chicken is golden and asparagus are cooked. |
11. | Garnish with the rest of the parsley. |
