Ingredients

2 yellow, green, red or orange bell peppers
1 large onion, chopped
1/2 lb. roma tomatoes, diced
1 garlic clove, minced
Crushed black or peppercorns to season
1 lb. lean ground turkey
1 tsp. ground cumin
1/2 tsp. Italian seasoning
1/2 tsp. salt
1/2 tsp. pepper
2 tsp. olive oil
1/4 tsp. paprika
3/4 cup shredded cheddar cheese
1 cup plain bread crumbs
Green onion to garnish
Easy, healthy stuffed bell peppers.

Instructions

1.Preheat oven to 325 degrees.
2.Cut off the top of the bell peppers and remove the seeds.
3.Place bell peppers on oiled baking pan.
4.In a large skillet, over medium-high heat, combine the ground turkey, onion, garlic and seasonings for about 7-10 minutes.
5.Add in tomatoes, bread crumbs and cheese and stir.
6.Add in mixture to each bell pepper. Sprinkle paprika on top.
7.Bake peppers for 20-25 min, until peppers are tender.
8.Garnish with green onion, if desired.

Ground turkey-stuffed bell peppers that are simple, yet flavorful.
