Ground turkey-stuffed bell peppers that are simple, yet flavorful.

| 2 yellow, green, red or orange bell peppers | |
| 1 large onion, chopped | |
| 1/2 lb. roma tomatoes, diced | |
| 1 garlic clove, minced | |
| Crushed black or peppercorns to season | |
| 1 lb. lean ground turkey | |
| 1 tsp. ground cumin | |
| 1/2 tsp. Italian seasoning | |
| 1/2 tsp. salt | |
| 1/2 tsp. pepper | |
| 2 tsp. olive oil | |
| 1/4 tsp. paprika | |
| 3/4 cup shredded cheddar cheese | |
| 1 cup plain bread crumbs | |
| Green onion to garnish |
Easy, healthy stuffed bell peppers.
| 1. | Preheat oven to 325 degrees. |
| 2. | Cut off the top of the bell peppers and remove the seeds. |
| 3. | Place bell peppers on oiled baking pan. |
| 4. | In a large skillet, over medium-high heat, combine the ground turkey, onion, garlic and seasonings for about 7-10 minutes. |
| 5. | Add in tomatoes, bread crumbs and cheese and stir. |
| 6. | Add in mixture to each bell pepper. Sprinkle paprika on top. |
| 7. | Bake peppers for 20-25 min, until peppers are tender. |
| 8. | Garnish with green onion, if desired. |
