Easy, flavorful chicken meal prep with a little more spice than your standard.
2-4 skinless chicken breasts | |
1 can chickpeas | |
1 lemon, sliced for garnish | |
1 package brown rice | |
For the marinade: | |
1/2 tsp garlic powder | |
1 tsp cumin | |
1/3 tsp kosher salt | |
1 tsp black pepper | |
1 tbsp honey | |
1 tbsp apple cider vinegar | |
Dash of paprika | |
1 shallot, thinly sliced | |
Parsley, to garnish | |
Red pepper flakes, to garnish | |
Dash of kosher salt |
Easy chicken meal prep, more tasty than your standard chicken and broccoli.
1. | Preheat oven to 400 degrees. |
2. | Drain chickpeas and rinse. |
3. | Mix the marinade. Combine oil, cumin, salt, pepper, garlic, apple cider vinegar and honey. |
4. | Pour marinade over chicken and chickpeas in a bowl. Set in refrigerator for approximately 20 minutes. |
5. | Place chicken and chickpeas on a sheet pan. |
6. | Slice shallot and sprinkle the pieces around the chicken on the pan. |
7. | Drizzle the remaining marinade on top of the chicken. |
8. | Sprinkle paprika and salt on top of chicken. |
9. | Thinly slice lemon and add to sheet pan. |
10. | Bake for approximately 25 minutes, until cooked through. |
11. | Cut chicken into slices, and garnish with red pepper flakes and parsley. |
