A delicious, quick way to meal prep ground beef and broccoli for the week…
| 1 lb ground beef | |
| 3 gloves garlic, minced | |
| 2 tsp rice wine vinegar | |
| 1 tbsp olive oil | |
| 1/4 cup low-sodium soy sauce (or treat yo self to regular soy sauce if you prefer) | |
| 2 tbsp brown sugar | |
| 3 green onions, diced | |
| 1 cup brown rice | |
| 1 cup broccoli and cauliflower florets mix |
An easy, yet tasty way to meal prep all that broccoli, cauliflower and ground beef.
| 1. | According to package directions, cook brown rice in a sauce pan. Since it's meal prep, no shame if you want to use an Uncle Ben's packet too...🤷♀️ |
| 2. | In a small bowl, whisk together vinegar, soy sauce, brown sugar and garlic. |
| 3. | Heat olive oil in a skillet over high heat. Add ground beef and crumble as you go until it turns dark brown, about 5-6 min. |
| 4. | Add broccoli and cauliflower, green onions, soy sauce mixture and rice into skillet. |
| 5. | Combine until broccoli and cauliflower are tender, about 5-6 min. |
