| 2 avocados, halved and seeded | |
| 2 large eggs | |
| Kosher salt | |
| Shredded cheddar cheese | |

| 1. | Cut two avocados in half and carefully remove pits. Hollow the middle of both with a paring knife. |
| 2. | In a nonstick skillet over medium-high heat, melt the butter. |
| 3. | Place the hollowed avocados in the skillet and crack one egg into each of them, seasoning with salt and pepper. |
