A tasty seafood-themed breakfast, that really isn’t as difficult to make as it sounds.
2 cups chicken broth | |
2 cups skim milk | |
1/3 cup butter | |
1 teaspoon salt | |
1/2 teaspoon pepper | |
3/4 cup uncooked grits | |
1 1/2 cup shredded cheddar cheese | |
1 lb uncooked shrimp, peeled and deviened | |
4 slices uncooked bacon | |
3 garlic cloves, minced | |
3 green onions, chopped | |
1 teaspoon Cajun seasoning |
The perfect brunch or breakfast-for-dinner.
1. | In a large saucepan, bring the butter, milk, broth, salt and pepper to a boil. Slowly stir in the grits. Reduce the heat to low. Cover and cook for 12-15 minutes or until thickened, stirring occasionally. Stir in cheese until melted. Set aside and keep warm. |
2. | In a large skillet, cook bacon over high heat until crisp. Remove to paper towels. Reserve drippings. Saute the shrimp, garlic and seasoning in drippings until shrimp turn pink. Serve with grits and sprinkle with onions and crumbled bacon.. |
