Ingredients

1 tbsp butter
1 tbsp olive oil
2 boneless chicken breasts, cut into cubes
1 tbsp olive oil
1/2 cup celery, chopped
1/1 cup carrots, chopped
1 small yellow onion, diced
1 cup whole milk
1 cup sour cream (or sub plain greek yogurt)
2 cups red baby potatoes, diced
2 tsp Italian seasoning
Salt and pepper to taste
10.5oz Cream of Chicken soup

Instructions

1.Melt butter in a large pot over medium heat
2.Season cubed chicken with salt, pepper and Italian seasoning. Cook chicken and then remove from pot.
3.Add 1 tbsp olive oil to pot, with veggies. Cook until softened, approx. 5-7 min.
4.Add chicken back to pot.
5.Combine Cream of Chicken soup, sour cream and milk. Add to pot and stir.
6.Let the soup simmer, until the carrots and potatoes are tender, about 50 minutes.
