| 1 tbsp butter | |
| 1 tbsp olive oil | |
| 2 boneless chicken breasts, cut into cubes | |
| 1 tbsp olive oil | |
| 1/2 cup celery, chopped | |
| 1/1 cup carrots, chopped | |
| 1 small yellow onion, diced | |
| 1 cup whole milk | |
| 1 cup sour cream (or sub plain greek yogurt) | |
| 2 cups red baby potatoes, diced | |
| 2 tsp Italian seasoning | |
| Salt and pepper to taste | |
| 10.5oz Cream of Chicken soup |
Creamy chicken stew, perfect for a rainy day indoors...
| 1. | Melt butter in a large pot over medium heat |
| 2. | Season cubed chicken with salt, pepper and Italian seasoning. Cook chicken and then remove from pot. |
| 3. | Add 1 tbsp olive oil to pot, with veggies. Cook until softened, approx. 5-7 min. |
| 4. | Add chicken back to pot. |
| 5. | Combine Cream of Chicken soup, sour cream and milk. Add to pot and stir. |
| 6. | Let the soup simmer, until the carrots and potatoes are tender, about 50 minutes. |
