2 avocados, halved and seeded | |
2 large eggs | |
Kosher salt | |
Shredded cheddar cheese | |
1 tablespoon butter |
This spin on the classic egg-in-a-hole is sure to brighten up your morning routine.
1. | Cut two avocados in half and carefully remove pits. Hollow the middle of both with a paring knife. |
2. | In a nonstick skillet over medium-high heat, melt the butter. |
3. | Place the hollowed avocados in the skillet and crack one egg into each of them, seasoning with salt and pepper. |
4. | Cover the skillet and cook eggs until preferred done-ness, then sprinkle cheddar cheese. |
